How the pros run it

Grip and load

Relaxed full grip on the mounted soft-grip handle; band the mud across the front third of the blade off a 6″ knife, not the whole face. Angle. Low to lay on (around 20–30°), steep and firm to feather off (past 45°). Read the bow — you’ll get a lot of it. The flat back gives you more flex per ounce than the extruded 09223, so small changes in hand pressure move the blade’s crown a long way: press the center to leave a hair proud, ease one end to feather it to nothing. That sensitivity is the flat back’s whole reason for being; learn to meter it and you feather with almost no effort, over-press it and you’ll dish. Keep it clean. Wipe both faces on the pan rim constantly — a crumb on a limber edge tram-lines just as fast as on a stiff one. Dry it. Blue steel goes home dry, every time; the wipe-down rag is the standing tax on the feel this knife is bought for.
